 - (A)ごま油 : 大さじ2
 - (A)酒 : 大さじ2

えのきは石づきを切り落とし、半分の長さに切る。(A)は混ぜ合わせておく。

フライパンを熱し、えのきを入れてほぐしながら炒めたら(A)と鷹の爪を加えて水分が出るまで炒める。黒こしょうをふり、全体を混ぜ合わせたら完成。
